The company secret Santa party was last week and since I’ve been going to my parents house the weekend before I decided to participate and bake some goodies for the party! I made some crinkly chocolate cookies but my Starbucks Copycat Cranberry Bliss Bars was a success! By the end of the day there were only crumbs left!
I love to bake sweets and breads and I always wanted to try to make these guys. I found a really great recipe online by The Recipe Girl and brought the ingredients! The only thing is that I didn’t get enough of the white chocolate. I used only 10oz bag of white chocolate chips.

CRANBERRY BLISS BARS

- 3/4 cup (1 1/2 sticks) salted butter, melted
- 1 1/2 cups light brown sugar
- 2 large eggs
- 3/4 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground cinnamon
- 1 cup dried cranberries (Split into two)
- 10 ounces white baking chocolate chips (or bar, coarsely chopped) (again, split into two)
- 1 package (8 ounces) cream cheese, softened
- 1 cup powdered sugar, sifted
Preheat the oven to 350 degrees F. Oil or butter a 13×9-inch baking dish
1st layer : Mix the melted butter & sugar in a mixing bowl at room temperature. Beat in the eggs and vanilla. In a separate bowl, whisk together the flour, baking powder, salt and cinnamon; Then slowly add the dry mixture to the butter mixture. Stir in the cranberries (½ Cup) and chopped chocolate (6oz).
Pour batter into the prepared pan. Bake for 18-21 minutes or until a toothpick inserted near the center comes out clean. Do Not Over Bake and let it cool on a wire rack.
Prepare the frosting: Melt the other half of the white chocolate (6oz). Beat the cream cheese and powdered sugar until well-blended. Slowly add half of the melted white chocolate until blended. Frost brownies. Sprinkle with cranberries and then drizzle with remaining melted white chocolate. Cut into squares and store in the refrigerator until ready to serve.
